Coriander is like that friend we all love—the one who gets along with everyone. There’s not a meat coriander can’t improve. It pairs brilliantly with fruits and vegetables, and it adds a citrus note to sweets and baked goods. It is the Miss Congeniality of the spice world.
Coriander seeds are mellow—warm, aromatic, and slightly sweet. It pairs particularly well with “C” spices: chili powder, cinnamon, curry and especially, cumin. Coriander is often used in spice rubs, marinades, chilis, sauces, soups, and curries.

For best results, before you use your coriander, dry roast the seed to enhance its complex taste profile. Use it whole, cracked or ground in a spice mill.
