Fennel seed is a remarkably versatile spice used by almost every culture; Italians use it on pork roast and in sauces, the French on fish, the Germans in sauerkraut, the Europeans in breads and cakes, the Chinese on poultry, and Indians use it in curries. And fennel is a key ingredient in our delightful Saturnalia blend.
Fennel is aromatic and sweet, with notes of licorice. It can be used to flavour pasta sauces, soft cheeses, baked bread (especially rye), cookies or cakes, curries, pork dishes, fish and seafood, coleslaw, potato salad, vinaigrettes and pickles.
For best results, crack the seeds slightly to enhance the flavour and aroma. If using the seeds in a savoury recipe, toast the seeds in a dry frying pan for two or three minutes before use.
