Charred Corn

Charred Corn

Sweet, smoky, tangy, and just a little bit addictive. Charring the corn brings out its natural sweetness, while lime, creamy mayo, and The Real Original add warmth and savoury depth. It’s just as happy beside something from the grill as it is stealing the show all on its own.

Ingredients

  • 3 cups corn kernels (fresh, frozen, or canned and drained)
  • 2½ Tbsp butter
  • Pinch salt
  • 3 Tbsp mayonnaise
  • 1–2 Tbsp lime juice
  • 1 tsp The Real Original spice blend(plus more for serving)
  • 2 Tbsp crumbled cotija or feta
  • Fresh cilantro, roughly chopped

Method

  1. Heat a cast-iron skillet over medium-high heat. Add the corn and cook for 8–10 minutes, stirring occasionally, until lightly charred.
  2. Remove from the heat and stir in the butter and salt.
  3. Add the mayonnaise, lime juice, and 1 tsp The Real Original. Toss until evenly coated.
  4. Finish with the cheese, cilantro, and the remaining The Real Original. Serve warm.
