Roasted Fennel with Orange & Coriander
2 medium fennel bulbs
1 tablespoon extra-virgin olive oil
2 tsp Coriander, toasted and crushed
1/2 orange zested and juiced
Salt and fresh ground black pepper, to taste
- Pre-heat oven to 400°F
- Slice fennel in half, lengthwise and remove the stalk by making two angled cuts. Then cut halves into 1/2” slices.
- In a bowl mix olive oil, coriander, salt and orange zest. Toss fennel pieces in oil to coat.
- Set on a sheet pan, and season with pepper. Bake for 35 – 40 min.
- Serve warm drizzled with juice.
