Lime-Infused Cilantro

Creating this sauce was inspired by a love for the bright, fresh flavours of summer and the idea came to me one day as I experimented with different ways to use up the bounty of cilantro that grew in my garden. Adding The Spice Who Loved Me was like magic! The sauce took on a new dimension, and it’s now my first ‘go-to’ for almost everything.   • A handful of washed fresh cilantro (stems included)
  • Juice of 1 lime
  • A handful of raw, unsalted cashews
  • ⅓ cup of warm water
  • 1 tsp of salt (adjust to taste)
  • 1.5 – 2 tsp of The Spice Who Loved Me
  • A dollop of mayonnaise (optional; use veganaise for a vegan version)


Making this cilantro sauce is a breeze, and it’s incredibly versatile. Simply gather all the ingredients and blend them together using a high-powered mixer, like a Vitamix or Magic Bullet, until smooth. For convenience, I love storing it in a squeezable bottle in the fridge, ready to add a burst of flavour to any dish.
